City College to host a tribute night to local restaurant Terre a Terre on Tuesday 22nd September

Two catering students from City College Brighton and Hove are getting the opportunity to learn some of the finer points of vegetarian cuisine at Brighton’s critically-acclaimed restaurant, Terre à Terre. It’ll be a rapid learning curve for thestudents as they’re mentored by the restaurant’s chefs during the busy,

high profile Brighton and Hove Food Festival.

Leroy Clarke, City College’s Catering & Hospitality Curriculum Team Leader, says:

"Brighton has been called the vegetarian capital of the UK so maintaining a high standard of vegetarian cookery is vital to our local catering industry. Therefore, getting work experience with a restaurant of

Terre à Terre’s calibre gives City College’s aspiring chefs a fantastic opportunity to hone their skills when it comes to this style of food."

Terre à Terre with a staff pool of 40 odd are always keen to up the ante with in-house training,

historically staff have climbed the ladder of success within and therefore made room for recent

graduates to join the team and raise their skills level.

"We feel it is our responsibility to ensure that the next set of graduates show real interest and passion when it comes to vegetarian and vegan cooking and we are more than happy to share all our trade secrets with them. There couldn’t be a more perfect time for Kirsty and Vicky to join the team (even temporarily),

in the midst of a food festival, they will lead their colleagues in the forthcoming

Terre à Terre will be offering a fabulous 3 course menu with canapés and wine, showcasing some truly fantastic local producers and bringing them along on the day to share their tales.
