Begin your Friday morning with warmth, colour and the unmistakable aroma of one of Ukraines most beloved dishes. In this intimate, hands-on workshop, just ten participants will learn how to make traditional Ukrainian borscht from scratch guided step-by-step by experienced Ukrainian cooks.
Borscht is far more than beetroot soup. Participants will discover how this vibrant, ruby-red dish layers flavour and history through simple, nourishing ingredients. A classic Ukrainian borscht typically includes:

* Fresh beetroot for its deep colour and earthy sweetness
* Cabbage, carrots and onions for body and balance
* Potatoes for heartiness
* Tomatoes or tomato paste for depth
* Garlic, bay leaves and black pepper for warmth
* Fresh dill and parsley for brightness
* Slow-simmered vegetable or meat stock
* A finishing spoon of sour cream for richness

You will learn about regional variations, family traditions, and the cultural importance of borscht as a dish of hospitality, resilience and celebration. And of course, at the end of the session, participants will be able to taste and enjoy the borscht they have helped to create.
Led by the Ukrainian Hearts of Lewes
This workshop is led by the fully licensed and experienced team from Ukrainian Hearts of Lewes who produced the extremely popular food we had at the Lewes Speakers Festival in January! Ukrainian Hearts of Lewes is a community-based charitable initiative supporting Ukrainians displaced by war while also raising funds for humanitarian relief. Through cultural events, food, music and educational activities, they celebrate Ukrainian heritage while building meaningful connections within the Lewes community. Funds raised support humanitarian aid, including medical supplies and essential assistance for those affected by the war in Ukraine.
With just ten places available, this is a rare opportunity for a small group to learn directly from Ukrainian hosts, ask questions, share stories and experience a dish that has become a symbol of Ukrainian identity around the world.
